Misfit Meatloaf
After a week of travel, some veg was just what we needed. Thanks to Steve C. for the onion gravy recipe.
2 lbs hamburger
1 lb pork sausage
2 TBSP butter
1 large onion chopped
2 carrots chopped
1-2 stalks celery chopped
3-4 cloves garlic chopped
2 tsps Arnold's Prairie Dust
2 TBSP Worcestershire sauce
3/4 cup Top Dog BBQ sauce, divided
2 large eggs
1 1/4 cup bread crumbs
2 TBSP dried parsley
Preheat oven to 350 degrees. Melt butter in pan, on medium heat, then add vegetables, stirring occasionally, cover and cook for about 10 minutes- until carrots soften. Add Prairie Dust, Worcestershire and 1/2 cup of Top Dog and remove from heat. Allow to cool, add meats, crumbs, parsley and eggs. This will make two smaller loaf pans, form into preoiled pans, brush with remaining bbq sauce and we topped with a couple dashes of Joltin' Josh's Coffee Rub to give it a bit of smoky flavor. Cook for one hour to 165 degrees
