Grilled Scallops with Grilled Squash


1 lb thawed and patted dry large scallops
2 TBSP olive oil
1 TBSP lemon juice
1-2 cloves minced garlic
Arnold's Prairie Dust
Joltin' Josh's Coffee Rub

Take patted dry scallops and mix with first 3 ingredients for 20 minutes, while greased grill heats up. (We used a Delonghi indoor grill, we really like it). Remove scallops from marinade, season with Arnold's Prairie Dust and lightly dust with Joltin' Josh's for a deeper smoky flavor. Grill for 2-4 minutes per side, until opaque.
Buttery and sweet, a very special meal.
Grilled Squash and onion simply brushed with Olive Oil, seasoned with Prairie Dust with a little balsamic vinegar on onion slices.
Very tasty meal and adds a bit of elegance to midweek.
