Blackened Fish

1 TBSP of Arnold's Prairie Dust
1 tsp of Italian seasoning
1/2 tsp mustard powder
1/4 tsp of cayenne pepper

Sprinkle mixture on dried fillets and place in smoking hot cast iron with butter. It is probably best not to make this when it is zero outside and windows need opened, lol. Sear on each side until IT of 130-135. This happens fast so have your sides ready, served with salad and twice baked potatoes.
